I know it's not common to eat salad over the winter, but I am really loving this at the moment.
The basic recipe comes from Jamie Olivers 15 minute meals,
and I just add other things to make it into a meal, rather than a side dish.
I use a "borner" slicer like this, as it's easier to clean than a food processor, and it makes the whole
meal quick and easy.
1 small zucchini
lemon
fresh mint leaves
1 small chilli
olive oil
salt & pepper

finely slice or grate the zucchini
add zest of 1/2 lemon
handful of mint leaves
finely cut chilli
juice of 1/2 lemon
olive oil - I just pop in a few 'glugs'
salt & pepper to taste

THEN add either.....
roast chicken pieces and avocado
OR
finely sliced carrot & fresh beetroot
OR
finely sliced beef
OR
finely sliced fresh fennel and fish
etc... etc... etc...
There are so many combinations that can be added to this
I also like to add nuts or seeds for added crunch
