I have been in a cooking rut for a while and was recently given Jamie's 15 minute meals, so decided that I would cook 1 new dish a week.
I bought all the ingredients, prepped the area, got out all the equipment etc..... and set to task
The dish I cooked was ricotta fritters in a tomato based sauce and a courgette salad.
image & recipe from here
It took me 25 minutes.....which wasn't bad, considering I had to keep referring to the book, shooing kids and the dog out of the kitchen etc...
The kids didn't really like it, but hubby and I LOVED it.
My husband is vegetarian. so this was a good meal choice for me to start with.
Next time I would take out the lemon zest and add some bacon and corn to the fritters, as then I think the boys would be more likely to eat them.
The courgette salad was divine!!!
So simple and fresh, I could easily have just sat down and eaten a whole bowl of this on it's own.
I'd highly recommend the book if this is how easy all the recipes are.
